Supernatural Recipe: Dean Winchester’s apple pie!

Autumn is here and autumn calls for a Supernatural rewatch. The next best thing to eating an American apple pie in a diner with the Winchester brothers is baking one while watching them hunt down the monster of the week (it’s also safer!).

Today, I’d like to share one of my favorite recipes which is heavily inspired by Bill Yosses’ Apple Pie. I’ve been baking it for a long time and I’ve made a few adjustments over the years. It’s absolutely delicious, so let’s get started, we got work to do.

Ingredients:

For the pie dough:
  • 375g all-purpose flour
  • 280g unsalted butter or margarine cut into small pieces
  • 6 or 7 tablespoons cold/iced water
  • A pinch of salt (it keeps the demons away)
  • 1 egg yolk to make the crust shine!
For the apple pie filling:
  • 3 apples (I like to use one of each kind for this recipe: granny smith, honeycrisp and gala)
  • 100g granulated sugar
  • 6cl honey
  • 45g cornstarch
  • 1 tsp vanilla extract
  • 1 tsp nutmeg
  • 1 tsp ginger
  • 1 tablespoon ground cinnamon
  • A drop of lemon juice

Step-by-step recipe:

  • Mix the flour and salt. Add butter or margarine (I personally prefer margarine #teamlactoseintolerant because the texture makes it easier to create the dough). Add cold or iced water, 1 tablespoon at a time, until you have a ball that holds together.

  • Divide the dough into two balls. Wrap them with plastic wrap and refrigerate for at least one hour.

  • Peel, core and cut the apples into pieces. In a saucepan, combine the sugar, honey, vanilla, lemon juice and spices (adjust the cinnamon, ginger, and nutmeg to your taste). Finally, add the apples and cornstarch.

  • Cook the mixture over medium heat for 20 minutes. Stir so it doesn’t stick to the bottom of the saucepan. It should thicken thanks to the cornstarch. Remove from heat and let it cool in a separate bowl.

  • Preheat your oven to 190°C. Grab your pie dough from the fridge, roll out two pieces on a lightly floured flat surface. Line a pie pan with parchment paper and place one piece of dough at the bottom.

  • Fill it with the apple filling. Lay the second round of pie dough over it. With a knife, cut small slits on top of the pastry. Using a pastry brush, paint the top dough with egg yolk and seal the edges.

  • Bake the pie for 30 to 40 minutes to 190°C. The top pie crust should be golden brown.

  • Serve warm!
